First Third: Floral and Crisp Cedar Notes
Primary Notes: A crisp, instantaneous rush of dry earthiness and cedar wood.
Accents: Delicate, almost flowery sweetness and hints of dry herbs.
Mouthfeel: Smoke that is mild on the palate, light, crisp, and refined
Second Third: Yeast and Nutty Cream
Primary Notes: The flavour develops into a light, yeasty bread character and creamy, silky notes of roasted almonds.
Accents: A hint of butteriness appears, giving the smoke a smooth, rounded feel.
Evolution: This third is the "sweet spot," where a fuller core balances the woody beginning.
Last Third: Light Spice & Earth
Primary Notes: Shifts back to a stronger wood and more noticeable earthiness.
Accents: A clean, lengthy finish of toasted oats may be complimented by a very subtle white pepper spiciness.
Finish: The last few minutes are balanced and don't become harsh.
